One of our goals at The Meeting Place on Market is to encourage healthy eating with fresh ingredients. This recipe uses fresh organic asparagus purchased from Keller’s Organic Co-Op. I usually don’t like asparagus, so this surprised me with how good it was. The kids even ate it! Thanks Mom for the recipe!
Ingredients:
Fresh asparagus
Olive oil
Sea salt
Pepper
Parmesan cheese
Drizzle olive oil on a baking stone or cookie sheet. Add asparagus and turn until lightly coated. Season with salt and pepper or your favorite seasoning. Sprinkle with Parmesan cheese. Bake at 400 until crisp-tender (about 10 – 15 minutes).
Alternate method: Follow above instructions, but don’t sprinkle the Parmesan cheese until after cooking. Instead of baking, broil at 400 degrees. Then top with Parmesan. (recipe from Tami Niemeyer).
